Danish chef Claus Meyer‘s new restaurant is set to open in the western half of Grand Central Terminal's Vanderbilt Hall in New York City later this spring. Icelandic chef Gunnar Karl Gíslason will take on the position as the restaurant‘s head chef.
Gunnar Karl used to co-own and head Dill Restaurant at Hverfisgata, Reykjavík, a long-time favourite among foodies of all nationalities, while Claus Meyer is one of the founders of Michelin starred restaurant Noma in Copenhagen, Denmark.
The project is beyond ambitious; the space will feature two restaurants, a food hall and a bakery. Mayer intends to cook up wonderful Nordic dishes from locally sourced products and serve in an informal way.
