Ólafur Ágústsson, who runs Kex Hostel’s bistro, Sæmundur í sparifötunum, will bring a piece of Iceland to Portland, Oregon, on the 19th of October. Ólafur is set to open a pop-up restaurant inside the wildly popular pizzeria P.R.E.A.M.
P.R.E.A.M. began as a hip-hop/pop-up pizzeria taking place on Monday nights at Ned Ludd. However, in April P.R.E.A.M. reopened as a full-fledged, 75-seat restaurant in Southeast Portland.
Staying true to its humble beginnings, P.R.E.A.M. now invites Sæmundur í sparifötunum to open a pop-up restaurant inside its locale. Ólafur is known to use only locally sourced produce and will incorporate Icelandic fish and lamb and local products. The menu includes a dish of braised lamb shanks, served with mushrooms, beer vinegar, and radishes and salted Icelandic cod, with potatoes, pickled onions, and brown butter.
