At the farm Efstidalur II in Bláskógabyggð district, South Iceland, one will find a delightful, family-run ice cream shop called Íshlaðan (The Ice Cream Barn). The ice cream is made from local milk, most of it produced by the family’s favourite milking cow, Snjólaug.

“The milk each cow produces is different, some produce milk that contains higher levels of fat. Snjólaug is without a doubt our best milking cow, she’s the boss,” explains farmer Sölvi Arnarson in an interview with Morgunblaðið newspaper.

The family also runs a restaurant, a guesthouse, and a horse rental on the farm, which is located a short drive from Geysir geothermal area. Sölvi says it has become very popular for people to stop by at the restaurant for lunch or an ice cream while driving the popular Golden Circle.
