Icelandic celebrity chef Solla Eiríksdóttir has been at the forefront of the raw movement in Iceland for over thirty years. She’s been named Favourite Raw Gourmet Chef in the annual Best of Raw contest and last year the Guardian listed her restaurant Gló as one of Europe’s best raw food spots. Now, she’s created her first cook book in English, entitled “Raw: recipes for a modern vegetarian lifestyle” and published by British publisher Phaidon on 4 May.

Solla wrote the book with her daughter, Hildur, who studied nutritional science and shares her mother’s passion for health and wellbeing.
The book is reportedly a fresh take on vegetarian and raw food and features 75 recipes, from morning smoothies and shots, to one-bowl-wonders such as Raw Root Salad and Icelandic Kimchi. All the recipes are vegetarian with a high percentage that are also raw and vegan. The raw recipes are either prepared from raw ingredients or have been cooked at extremely low temperatures, allowing the vegetables, grains and pulses to retain their maximum nutrients.
The book is illustrated with 100 specially commissioned photographs of the dishes as well as the stunning Icelandic landscape.
Phaidon publishes books on the visual arts, including art, architecture, photography, and design worldwide. Raw: Recipes for a Modern Vegetarian Lifestyle costs around 24.95 GBP (36 USD/32 Euros).
